Avocado and Poached Egg on Toast

This delicious avocado and poached egg on toast recipe contains 1 serving of 366kcal, 13g protein, 30g carbs, 23g fats 😋

 

You will need:
1 avocado
1/2 tbsp lemon juice
1 slice bread
1 egg
Salt and pepper

 

Then just follow these easy steps:
1. De-seed and peel the avocado then place the avocado into the bowl
2. Add 1/2 tbsp of lemon juice into the bowl and mix well
3. Toast your bread until golden and crispy
4. Meanwhile, poach your egg in a pan of boiling water
5. Spread your toast with the avocado mixture
6. Once the egg is poached, place onto kitchen roll to remove excess water

7. Scoop egg on top of the avocado topped toast and season with salt and pepper
