Halloumi Stuffed Peppers

This delicious halloumi stuffed peppers recipe serves 4 people (1 halloumi stuffed pepper each) and each serving contains 334kcal, 16g protein, 19g carbohydrates and 22g fat
You will need the following ingredients:
4 large red peppers
290g jar antipasti marinated mushrooms
50g couscous
100ml hot vegetable stock
250g halloumi cheese, cut into cubes
2 tsp chopped parsley
Optional mixed salad and/or garlic bread to serve
Then follow these steps with the above ingredients:
- Preheat the oven to 200 degrees in a non-fan assisted oven or 180 in a fan assisted oven
- Cut the peppers in half through the stalks and scoop out the seeds then place them onto baking tray
- Drain the mushroom oil into a bowl and drizzle 1 tablespoon of the oil onto the peppers then sprinkle with salt and pepper
- Bake for 20-25 minutes until the peppers are tender
- Whilst the peppers are cooking, tip the couscous into a bowl and pour in the hot stock
- Leave for 5 minutes to soak then fluff it up with a fork and stir in the mushrooms, halloumi and parsley
- Season with salt and pepper and then spoon the mixture into the peppers once they are cooked until tender
- Return to the oven for a further 15 minutes or until the halloumi is golden
- Serve with salad and/or garlic bread to make it into a full meal
