One Pot Mediterranean Chicken Orzo

This one pot Mediterranean chicken orzo dish contains 628 calories, 47g protein, 64g carbs and 5g of fats.

You will need the following ingredients:

1 raw chicken thigh or breast

1-2 tsp paprika

1-2 tsp ground turmeric

1 tsp salt

1 whole small onion

1 fresh carrot

4 average white mushrooms
2 garlic cloves

7 cherry tomatoes

1 tsp lemon juice

1 tsp dried parsley

Chicken stock cube

Olive oil spray

Uncooked orzo pasta (I couldn’t get this so I used risotto rice and that was lovely)

1 tsp ground allspice

 

Then follow these steps:

1. Coat the chicken with the paprika, ground allspice, turmeric and salt and leave for 10 minutes.
2. In the meantime chop the veg

3. Spray a large pan with the olive oil spray and heat gently

4. Cook the chicken on both sides until they’re brown
5. Put the chicken into an oven pan and keep warm whilst you cook the vegetables

6. Add a few more sprays of low calorie olive oil to the pan and fry off the onion, carrot, garlic and mushrooms until the onion is soft

7. Add the tomatoes, lemon juice, 100ml chicken stock. Mix well and add the pan contents into the oven pan with the chicken. Place the lid on the oven pan and cook in the oven for 30 minutes on 180 degrees

8. Carefully remove the pan from the oven and add the orzo pasta, parsley and sufficient water to cook the orzo pasta. Then return back to the oven for a further 20 minutes or until the pasta is cooked

9. Serve up and enjoy!
