Here is my recipe and step by step guide for my Chicken and Chorizo bake.
This serves 4 people. Total calories per serving =461. Total amount of protein per serving = 47. With this recipe being low in calories and high in protein this is the perfect meal to aid weight loss. If any ones goal is weight gain feel free to add pasta to this recipe to up those calories.
- 2 large sweet potatoes (I ran out of potatoes in video so used wedges as well)
- 2 red onions
- 2 bell peppers (any colour)
- 1 pack of Chorizo
- 4 chicken breasts
- 2 tins of chopped tomatoes
- 1 tin of sweetcorn
- 2 table spoons tomato puree
- fry light
- Cheese (*optional*)
- Pasta (*optional*)

Step 1: Pre heat oven to high temperature
Step 2: Prep the potatoes. Chop ends off sweet potatoes. Peel both of the sweet potatoes. Then chop them into chunks and put on a tray. Spray with Fry Light and season with salt. Use hands to mix. Then put in oven to cook for roughly 30 mins.
Step 3: Chop ends off onions and peel them. Dice the onions and add to a frying pan.
Step 4: Cut out middle of pepper and chop into chunks. Add the peppers to the frying pan with the onions.
Step 5: Add garlic, salt and Fry Light to the pan. Turn on hob and cook. Keep stirring until cooked.
Step 6: When onions and peppers are cooked put them into a large dish, with: 1 tin of chopped tomatoes, sweetcorn, 2 tbsn of tomatoe puree.
Step 7: Cut all the chorizo into 4 pieces and put to one side.
Step 8: Chop all 4 chicken breasts put into frying pan and cook.
Step 9: when the chicken is cooked add the chorizo into the frying pan and mix together for about 5 mins. When cooked add this to the dish with the other ingredients.
Step 10: When the sweet potato is cooked add this into the dish too.
Step 11: Add in other tin of chopped tomatoes to the dish. Give it a good stir. Then if you want grate cheese on the top. (cheese is optional). When you’ve done this put the dish into the oven to bake for around 15 mins.
Step 12: When cooked (Cheese has melted), dish up and enjoy!
As i mentioned this dish will serve 4 people and if you want to you can add pasta to this to make it extra filling!
